Turkey Schnitzel

Ingredients:

Turkey cutlets
Bread crumbs
Salt
Pepper
Egg
Oil for frying - Peanut (deep fry or pan fry)

Directions:


Preheat deep fryer to 350F. Place turkey cutlets between two pieces of plastic wrap and pound thin using the flat side of a meat tenderizer. Salt and pepper both sides of the turkey. Beat the egg(s) and then dip both sides of the turkey cutlet in the egg, then press into the bread crumbs until coated. Either deep fry or pan fry in oil until golden brown, this only takes about 3-5 minutes, I check with a meat thermometer to ensure temperature is over 160F. Serve with French fries tossed with salt and paprika. Always serve this with a lemon wedge or slice and squeeze lemon juice over the schnitzel.



Schnitzel was always one of me favorite things to eat in Germany.  They make a healthier version than the traditional veal or pork versions using turkey cutlets, which happen to be alpha gal safe.
